| Serves 8 1 lb. summer green beans or french filet (haricots verts) beans - trimmed and cut into 1-2 inch pieces 1/4 cup "Girard's Champagne Salad Dressing" 1/4 cup sliced almonds salt and pepper Take fresh beans, a large pot of water, and 1 or 2 tablespoons of salt. (The salt sets the green color and rinses off under running water). Bring salted water to a rolling boil, put in the trimmed beans and cook until just tender-crisp (about 3-5 minutes). Drain beans immediately under cool running water and plunge into a bowl of ice water to chill down. Once chilled, drain on paper towels. The beans will be a beautiful dark green. You can use this method of preparing your beans for any salad or side dish. Toss the beans with the "Girard's Champagne Salad Dressing". Add almonds and pepper to taste. These beans will keep 1 week or more in the refrigerator. We make a double batch and keep for lunches and dinner side dishes. They make a wonderful light meal served with heirloom tomatoes and cottage cheese on a bed a fresh summer greens. |
